INGREDIENTS
2 tbsp grape seed oil
1 large yellow onion, diced
1 large red bell pepper, diced
3 cloves fresh garlic, chopped
1 tsp smoked paprika
1 tsp cumin
1/8 tsp cayenne pepper
28 ounce can of unsalted crushed tomatoes
1 tsp salt
1/4 tsp black pepper
6 large eggs
1/4 cup feta cheese crumbles
1 tbsp fresh chopped cilantro
fresh nann bread (optional)
INSTRUCTIONS
Preheat oven to 375 degrees
Heat up the oil in a large cast iron skillet over medium/low
Add diced onions and peppers. Cook and stir occasionally for about 15 mins or until onions and pepper become soft
Add garlic and cook for another 1-2 mins
Stir in the smoked paprika, cumin, and cayenne pepper. Let flavors cook in for 1 min
Pour in tomatoes and season with salt and pepper. Let cook for about 10 mins
Using a spoon, create 6 small wells in the tomato sauce. Gently crack eggs and place into each well
Place pan into oven and bake for about 8 mins or until eggs are cooked
Remove from oven and top with feta and cilantro
